Veggie Wraps
/These bad boys can be great for entertaining or lovely for a light lunch! Depending on my mood I'll either use Rice Paper Wraps or Collard Greens.
Wraps
- 5-7 Rice Paper Wraps
- 1 Head of Lettuce
- 1 Avocado Sliced
- 1 Red Pepper Sliced
- 1 Yellow Pepper Sliced
- 1 Carrot (shredded or spiralled)
- Handful of Fresh Basil or Oregano
Avocado Dip
- 2 Lemons Squeezed
- 1 Avocado
- 1 Minced Garlic Clove
- 1 inch Grated Ginger (or 3 drops of Ginger Essential Oil)
- 1 Tbsp Tahini
- 1/2 Cup filtered water
- Himalayan Salt (to taste)
Soak the Rice Paper wraps in a shallow pan with warm water until soft. Then add the Lettuce, Peppers, Carrots & Herbs. Wrap em up! Place all ingredients for the dip into a blender or food processor and blend until smooth.
Cut in half and serve with a dollop of dip.
Serves 4-6 as a snack:)

*** Keep in mind there are many other wonderful veggies you can choose for the wraps! Red Cabbage, Sprouts, Spinach, Cucumbers or whatever you have kickin' in the fridge!
