Beauty Beet Dip

This is such a great way to enjoy the deliciousness of beets.  I just love how pretty this one looks and it is such a beautiful appetizer to bring to a summer shaker!

  • 4 Cups of Chopped Beets (leave skin on when using organic other wise peal)
  • 1 Cup Of Goat Cheese
  • Hymalayan Salt (optional)
  • 2 Tbsp Olive Oil

Preheat oven to 350 C. Chop up your beets and place onto a baking pan and drizzle the olive oil on top.  Bake beets for about 30 minutes until soft.  Let cool and the add to your blender along with the goat cheese and dash of Himalayan salt.  Blend on low or pulse until smooth consistency. Serve with crackers.

Juicy's Guacomole

Guacomole is SO easy to make!  The ones you find in the store have added unwanted ingredients.  Just whip up in your blender and it will be done in no time!

  • 2 - 3 Ripe Avocados
  • 1 Small Onion roughly chopped
  • 1 Jalapeno
  • 1 Small Tomato cut into quarters
  • Juice of 1 Lime (Or Lime Essential Oil or Both)
  • 1 Cup Fresh Cilantro
  • A few ginds of Himalayan Salt (to taste)

Place all ingredients into blender and process until desired consistency.  I personally love to add a few drops of Lime Essential Oil along with the Lime juice.  (Sooo Yummy!)  Serve with stone ground Organic Tortillas.  Or, add to a Burger, Fahita or even your Breakfast Omelette.

***Juicy Tip - If you want to make this a well rounded snack for your kids add a table spoon of Hemp Hearts to up the protein content.  Enjoy!  Live Juicy!

Jalapeño Poppers

Feel like indulging?  Entertaining?  These are always a hit!  There are lots of Jalapeños Poppers you can buy in stores but they are usually breaded and full of unwanted ingredients.  I always grow Jalapeños in my garden every year and when you can make it with those fresh ones they are totally dynamite! 

  • 5 - 10 Jalapeños (depending on how many you want to make) halved and seeds removed
  • 1 cup Soft Goat Cheese
  • 2 - 3 Slices of Nitrate Free Organic Bacon halved and sliced
  • Handful of Arugula (optional)

Once you halve and remove seeds from the jalapeño spoon in some goat cheese and level.  Wrap with a bacon piece and spiral around the jalapeño.  Bake in a 350 F preheated oven for 35 - 40 mins.  (Depending on the size of jalapeño and thickness of bacon).  Then serve on a bed of arugula!  I like to put a few arugula leaves on top of my popper (but thats totally optional).  My kids LOVE these!

***Juicy Tip - Jalapeños are a rich source of vitamin C.  Vitamin C is an antioxidant that helps prevent damage from free radicals, rogue molecules that can cause cell damage in your body. Jalapenos are also a source of vitamin A, which supports skin and eye health.  Enjoy!  Live Juicy!
