Flax Nutbutter Cookies

My grandma makes the yummiest peanut butter cookies! This one took a little to figure out, but has turned out great and was a hit with the kids.  Love to make up in batches and freeze for school lunches or when friends pop over! 

  • 1 1/4 cup almond flour
  • 1/3 cup flaxseed (ground)
  • 2 tsp non aluminum baking powder
  • 1 cup organic peanut butter (or nut butter of your choice)
  • 1/2 cup coconut oil
  • 1 cup coconut palm sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp stevia

Preheat oven to 350 F.

In a large bowl mix together the almond flour, flaxseed, and baking powder.  If you have a blender or  mixer handy put the nut butter, eggs, and coconut palm sugar into the blender and process until smooth.  Add in the dry ingredients and mix. 

Using approx 2 tbsp's of the cookie batter roll into balls and place on cookie sheet.  Then press down with a fork.  Bake in oven for 12-15 mins.  Once they come out sprinkle with stevia, let cool and enjoy!

Makes 18-24 cookies:) 

 

Chewy Fudge Brownies

Valentine's Day is just around the corner, everyone always love's a little treat to sweeten the day!  This easy recipe will totally amaze you and it is a WIN WIN with the kiddos!  

Brownies

  • 1 270g bag of cacao chocolate chips
  • 3 tbsp of coconut oil
  • 2-3 avocados
  • 1/2 cup organic maple syrup or raw honey
  • 1 tsp vanilla
  • 3 eggs
  • 1/2 cup cacao
  • 1/2 cup brown rice flour or coconut flour

Frosting

  • 2 avocados
  • 6 tbsp cacao
  • 6 tbsp organic maple syrup or raw honey

Pre-heat oven to 400 C. In a saucepan slowly melt the coconut oil and chocolate chips stirring until smooth.  In your blender or food processor add the avocados and puree.  Add the chocolate mixture to the blender and slowly pulse until blended.  Next add the maple syrup and vanilla to blender and slowly pulse.  Crack the eggs into a separate bowl and wisk, then add to the blender and gently fold in. Next add the cacao and brown rice flower.  Blend until smooth.

Use about 1 tbsp of coconut oil and line a glass 9x13 baking dish with the oil (edges included) pour in the batter and spread evenly.  Bake for 12-15 minutes. (should be fluffy like a cake when it comes out of the oven). Let cool.

For the frosting, add the avocados, cacao, and maple syrup to blender and process until smooth.  Spread the frosting over the brownies and let cool in refrigerator for at least 30 mins before serving.  Cut into portions and ENJOY!!!

Pecan Coconut Balls

Another 5 ingredient or less recipe! Need a boost of energy? Craving something sweet?  This should do the trick:) You can even freeze them afterwords making it easy to grab when you want to enjoy a tasty treat.  Best part is they are quick and simple to make! 

  • 2 Cups Pitted Dates
  • 1 Cup of Pecans
  • 1 Cups of Sunflower Seeds
  • Dash of Himalayan Salt
  • Shredded Coconut

Place the first four ingredients into blender.  Process on low until it begins to look like a paste.  Then roll into balls, roll the balls in the shredded coconut.  Chill and serve:)  Don't be afraid to change it up with different kinds of nuts, pumpkin seeds, or whatever you have on hand:) 

Makes approx 30 Bites sized balls
