Guilt Free Chocolate Pudding

Soooo you will be surprised how well these flavours blend together!  It is a great and healthy dessert that YOUR KIDS will LOVE and they won't even know it's mainly made from Avocados.  Yes I repeat AVOCADOS!  Have you ever looked and understood the ingredients in store bought puddings?  This is so simple and easy to make!  

  • 2 Avocados
  • 4 Tbsp Coconut Milk
  • 2/3 cup Raw Cacao Powder
  • 1/2 Cup of Real Maple Syrup or Raw Honey
  • 1/2 Tsp of Cinnamon or drop of Cinnamon Essential Oil  (optional)
  • 1/2 Tsp Simply Organic Vanilla extract or inside of 1 Vanilla Bean

 

Place all ingredients into blender or food processor and blend until creamy.  You can top with Cacao Nibs or non GMO Vegan Chocolate chips for some extra texture and flavour.  The cinnamon and vanilla pair lovely together but if you prefer other "chocolate flavours" such as orange or mint you can always use different essential oils to flavour!  (because they are so concentrated use 1-2 drops only or to taste).

Serves 4 - 6 :)

Simple Chocolate

You will be amazed how easy this is to make and there are so many different things you can do with it!  Plus it actually contains health benefits!  Guilt FREE! 

  • 2/3 cup Coconut Oil
  • 1 1/2 cups Raw Cacao Powder
  • 1/2 Cup Maple Syrup (to taste)

On low heat melt the Coconut Oil,  Cacao Powder and add Maple Syrup.  My kids love to dip Chocolate on there fruit so I will usually have some on hand when I make this.  This time I just simply dipped the fresh strawberries into the melted chocolate and then placed on a plate with parchment paper.

For the Bark

  • 1/4 Cup Shredded Coconut
  • 1/4 Cup Chopped Almonds (or nut of choice)

Once the chocolate is melted I pour onto a  baking sheet lined with parchment paper and then sprinkle the coconut and almonds on top.  Put into freezer or refrigerator until nice and cool and then break into pieces.  Note- Coconut Oil melts easily in warm temperatures so keep this one in the fridge until ready to serve:)
